There were no new mobs added in Minecraft 1.19.

The Allay was the winner of the 2021 mob vote, a little helper that collects items for the player. Frogs and tadpoles are added to the swamps, within the Minecraft code they are technically different mobs. The Warden is finally added after having been teased since 1.17.
