Snapshot pre-1.21.5 (Part 2)

This update focuses on the upcoming changes for the summon command. Mobs items, armor, and saddles are moved to the equipment tag, rich text is now json formatted.

The mob command generator is not quite fully updated for the next version, as mob variants are still being worked on, along with a few minor changes have been missed in this update. There was quite a lot to do to get things working and the next update will focus on completing the version changes, including new item icons/items and mob variants.
